Springfield Wild Yeast Chardonnay 2008 (Chardonnay)
Bruwer Family owned, fourth generation of producers and ninth generation of Bruères, French Huguenots who arrived in South Africa in 1688, and they were the ones who brought vines to these lands. The winery has its peculiarity of the site where the farm is located. A dirt road with trees meanders winery complex that is flanked by a dam, and magnificent views of the mountains. Retrieved from vines more than 27 years old, with a yield of 4 tons per hectare. Harvested at night were taken to the winery for once selected are introduced into tanks for fermentation with native yeasts for 60 days to complete the natural malolactic fermentation on its lees for 13 months. 2.5 micron filtration before bottling.

I recommend to pair it with "Pinchos" or "Tapas".
