Graham Beck Wines Brut Zero 2012
- View: golden peach.
- Nose: aromas of cherries, cranberries, almonds and earthy spices.
- Mouth: a delicate but complex palate, red berries, yellow fruits and hints of brioche bone. Great balance and a long finish with a slightly salty finish.
GRAPES: 77% Pinot Noir and 23% Chardonnay.
AGEING: aged in bottle on its lees for 60 months.
PREPARATION: Chardonnay and Pinot Noir grapes are pressed in whole bunches, separately. Only the juice of the highest quality (with less pressure on grapes) is selected for this wine. The juice is deposited for two days before the clear juice move for fermentation in stainless steel tanks 15 decrees Celsius regulated. Secondary fermentation in the bottle begins in early June 2012.
PAIRING: Crustacean dishes and sushi.
