- View: Pale straw gold.
- Nose: aromas of fresh and high peach, floral nuances of jasmine and orange blossom.
- Mouth: more intense flavors on the palate, soft and fleshy mandarin fruit jam outstanding. Final with moderate length, hints of apple and spices.
APPELLATION: New South Wales.
VINEYARD: Riverina vineyards surrounding the towns of Griffith and Yenda. The vines grow in a warm climate continetal, predominantly dry ripening periods, giving excellent conditions for growing grapes.
AGEING: aged for 6 to 8 weeks on yeast lees. Viognier was then blended, filtered and bottled.
ELABORATION as maturity was reached, the Viognier grapes were harvested in the cool night to retain freshness and minimize oxidation. The fruit was crushed, de-stemmed and cooled bags press. After being gently pressed, the juice is clarified before slow fermentation at cold temperatures of 14 and 16 ° C, using carefully selected to optimize yeast lush varietal flavors.
PAIRING: fresh fish and chips, prawns, scallops or creamy pasta.
Bob and Cherie set about planting the first Berton Vineyard cuttings that spring - ten acres of Shiraz and seven acres of Chardonnay - without any permanent water - it wasn't until the following year, in 1998 when the dam filled that the vines got a decent drink!! It was due to these conditions and the seemingly hydrophobic podsolic soils that the vines struggled to become established. After a few years where the vines still looked like rootlings, a Swedish friend jokingly called it the bonsai vineyard - and the name stuck and later became the name of their premium Shiraz. High Eden has a high annual rainfall so the vines are looking good these days... but they still remember the early days every time they crack open a bottle of Bonsai!
