Sierra Cantabria Gran Reserva 2009 (Graciano and Tempranillo)
TASTING NOTES:
- View: Cherry color with garnet edge.
- Nose: balanced and complex. Aromas of ripe fruit and spices. Fine reduction.
- Mouth: Structured, tasty, balanced and persistent. ripe tannins.
APPELLATION: Rioja.
VINEYARD: Vineyards Sierra Cantabria.
GRAPES: 98% Tempranillo, 2% Graciano.
AGEING: In American oak barrels of 225 liters for 26 months (25% new barrels, barrel 75% with a maximum of three wines use). Decanting are performed every 4 months the first year and every 6 second.
PREPARATION: Traditional elaboration destemmed. Subsequently alcoholic fermentation is initiated for 9 days with native yeast selected from its own vineyards, with temperature control of 28 to 32ºC. Post-fermentation maceration with the skins for 8 days. Two times per day until the end of fermentation. During maceration pumping frequency according advances the process to avoid the extraction of vegetable and bitter characters is decreased.
WINE PAIRING: Goes well with poultry dishes, grilled lamb, cheeses, small game.
RECOMMENDED SERVING TEMPERATURE: 16 ° C
