Lalomba Magnum 2018 (Garnacha, Macabeu, Viura and Garnacha negra)
- View: peach pink, pale, bright and presence of tears.
- Nose: clean, honest and fine. Complex nuances, with aromatic family groups, mainly white fruit, fresh florals, citrus notes and memories of red fruit.
- Mouth: intense, balanced acidity, with some tannic presence in the mouth, large volume and structure.
GRAPES: 90% Grenache and 10% Viura.
AGEING: Once the wine consumed sugars left in contact with its fine lees for 4 months.
PREPARATION: Manual harvest of the grapes in small boxes of 12kg which were cooled and transported to the winery to stay cold room for 12 hours. Then I go through the optical selection table, getting the best selection of some shelled grapes, "berries" whole and in perfect condition. Then grapes carried press, where inert and cold environment, the pressing process is started, obtaining only the must. This process remains stabling for 3 days with all its lees. After this time is settling by gravity. After 24 hours of decantation the clean must is racked in the absence of air, to initiate the alcoholic fermentation in concrete tanks where the evolution of the temperature is controlled throughout the process.
PAIRING: as an aperitif, with fatty fish, sushi and mussels.
RECOMMENDED SERVING TEMPERATURE: 11-13ºC

We paired it with meat but I would have prefered to pair it with another dish.
The Macabeu has become my best friend.
You can see a clear pink colour. Powerful aromas of strawberry and raspberry. Lalomba Rose Magnum was ok, the kind of my taste.
We've had it with sushi.
