Finca El Bosque 2006 (Tempranillo)

2006 Finca El Bosque is made with the Tempranillo variety grown on a farm of one hectare and a half; the vines were planted in 1973. During the 2006 harvest just over 1 Kilo per vine were collected. This very limited production makes only 5215 bottles were bottled. The harvest is done manually, making a selection grain by grain, both in strain and further selection in the cellar. Maceration with the skins for 14 days. Fermented in French oak tub. Aged for 16 months in new French oak barrels and Central.

AGING: 16 months in new barrels of French and Romanian oak.

Envejecimiento: 18 meses en barricas de roble francés y centroeuropeo
Grado alcohólico: 14,5%
Elaboración: Despalillado manual y selección rigurosa grano a grano. Maceración pre-fermentativa en frío a 8ºC durante 3 días. Fermentado en tino de roble francés de 8.000kg. a 28ºC. Pisado 2 veces al día durante los 8 primeros días de fermentación y 1 vez al día durante los 5 restantes. Maceración con hollejos durante 21 días. Fermentación maloláctica en barrica nueva de roble francés y rumano.
