Dalmau 2016 (Cabernet Sauvignon, Graciano and Tempranillo)

- Nose: Notes complex and velvety. Shows hints of wild fruits and mineral nuances and black chocolate. Step memories toasted oak.
- Mouth: Elegant and full-bodied, intense and structured. It is powerful and harmonious. Great balance.
APPELLATION: La Rioja, Spain.
VINEYARD: Bodega Marqués de Murrieta.
GRAPES: Cabernet Sauvignon, Graciano and Tempranillo.
AGEING: aged for 19 months in French oak barrels of Allier and thins another twelve months in bottle.
PREPARATION: The grapes used by Dalmau Reserva comes from a century-old vineyard located at Finca Ygay, more specifically in the Pago Canajas. It is 465 meters high and has a clay-calcareous soil type with abundant boulders. When Dalmau Reserva beans have acquired their characteristic color, thinning-elimination of surplus grapes clusters it is performed. In the winery, the different varieties are fermented autonomously controlled remperature for eleven days. While the Tempranillo fermented in small stainless steel tanks, Graciano and Cabernet Sauvignon make in small oak barrels. Before raising traced processes are performed, to encourage yeast activity, and delestage, in order to oxygenate the wine and increase yeast.
WINE PAIRING: Excellent with with braised pork, blue fish, Iberian ham, grilled lamb, grilled red meats, stews and sheep cheeses.
RECOMMENDED SERVING TEMPERATURE: 17ºC

Red intense cherry colour and very high layer. Aromas of red fruit jelly, with notes of green pepper. It is a very balanced .
