Tábula 2016 (Tempranillo)
- View: Intense cherry red, purple trim. Layer cover and deep slow glyceric tear.
- Nose: Powerful, intense, very crisp fruit, clean aromas from aging. Blackberry and raspberry, balsamic tones, spicy and some torrefacto.
- Mouth: balanced, fleshy, greedy and soft tannins.
APPELLATION: Ribera de Duero.
VINEYARD: Age: over 40 years. Chalky loam soil and clay-chalky.
GRAPES: 100% Tempranillo.
AGEING: 20 months aging: 14 months in French oak barrels and 6 months in vats of French oak.
METHOD: Handpicked in boxes of 15 kilos. Cluster selection table, mechanical stripping and subsequent manual selection of grains. Alcoholic fermentation at controlled temperature for 10-12 days in French oak vats. malolactic fermentation 75% of the wine in French oak barrels and 25% in wooden vats.
WINE PAIRING: stews of meat, vegetables and wild game dishes.
