Resalte Vendimia Seleccionada 2016 (Tempranillo)
TASTING NOTES:
- View: Red-blue, violet edges, clean and bright.
- Nose: fruit compote, wet earth and leather embossed on a background of smoked meat.
- Mouth: firm entry with a clear structure and tannic in its route, correct acidity with tannin for making and persistent end .
APPELLATION: Ribera del Duero.
GRAPES: Tempranillo.
AGEING: 10 months in French oak barrels of 500 L. from different toneleras and toasted.
PREPARATION: prepared by the gravity system and exhasutivo temperature control, to get the grape to deposit, lowering its temperature rapidly to 8 °C for about 5 days, which we extract all the aromatic potential and grape color. Later start of the alcoholic fermentation, the wine not exceeding 24 °C. Then a maceration around 18 days in full.
PAIRING: veal shank and small game.
RECOMMENDED SERVING TEMPERATURE: 14ºC
ALCOHOL: 14.5%
