Description of Pago de los Capellanes Reserva 2007
Pago de los Capellanes Reserva 2007 (Cabernet Sauvignon, Tempranillo and Tinto Fino)
In the heart of the Ribera del Duero is located Payment of Chaplains, located a kilometer of Pedrosa de Duero, Burgos town in which they gather some of the best grapes of the entire Bank. Originally, the estate had barely a few thousand strains on the traditional form of glass. Marriage Rodero - Villa, surrounded by an exceptional team, and betting on a very particular way of conceiving the wine has made today the payment of Chaplains exceed one hundred acres of vineyards, trellis, which surround the winery , combining varieties like Tempranillo or Tinto Fino, Cabernet, and Merlot, and making it possible to realize a dream that dates back to 1980. Decreased production allows strict control of the final product quality and personal follow-up of all bottled items. In the vineyards of the winery only allow 5,000 kg of grapes per hectare, below the 7,000 allowed by the Regulating Council of the Ribera del Duero, a clear example of the commitment to the quality of our raw material. From vineyards, Tempranillo or Tinto Fino and 10% Cabernet Sauvignon, we make our Reserve. After a thorough monitoring of the harvest date is decided on the maturity of the grapes, independently leading varieties to 20,000 liters tanks for fermentation separately. Fermentation and maceration: Starting a cold prefermentation for 6 days below 14 ° C for 30 days and racking for bleeding and without addition of presses. Malolactic Fermentation: Slow and relaxed without addition of bacteria at 20 ° for 28 days. Aged for 18 months in new French oak barrels. The blend is made and bottled without going through cold, or clarify, and filter.
