Pago de los Capellanes Joven Roble 2013 (Cabernet Sauvignon, Merlot and Tempranillo)

- Palate: The wine-palate is elegant, velvety, large, long-lived (persistent). Lively and fresh, with a light, subtle tannins, fruitiness and refreshing acidity are the hallmarks of Pago de los Capellanes Joven Roble 2013.
DESIGNATION OF ORIGIN: Ribera del Duero
VINEYARD: Payment of Chaplains (situated in Pedrosa de Duero). Vineyards situated 800 meters above sea level.
- Soil: Clay limestone.
- Climate: Weather conditions are somewhat extreme, with very hot summers and very cold winters.
. - Yield: Under 5,000 kg / ha.
GRAPES: Tempranillo. Selected vintage.
PREPARATION: Once the grapes at the winery introduced after a short pre-fermentation cold spontaneous alcoholic fermentation (no added yeast) is started.During maceration, which lasts 22 days, pumping and monitoring are performed daily bazuqueos density, temperature and evolution of the yeast population. At the end of the fermentation, the deposits are bled and malolactic fermentation.
AGING: For 5 months, the wine is aged in new French oak barrels. After this period, deposition is carried, is homogenized by a light cartridge filtration and bottled.

TEMPERATURE: 16-18° C.
