Pago de los Capellanes el Nogal 2015 (Tempranillo)

APPELLATION: Ribera de Duero.
VINEYARD: The vineyard Pedrosa de Duero, in Burgos.
GRAPES: 100% Tempranillo.
AGEING: 18 months in French oak barrels selected grain.
PREPARATION: The grapes previously selected rest for 24 hours in cold storage before processing. For an intense aroma maceration is done for six days with temperatures below 12 ° C. Then seeded with selected yeast and fermented in oak fudres. Subsequently over-encuba at 26 ° C for 28 consecutive days. Malolactic fermentation type occurs slowly, being necessary to temper the malolactic room at 22 ° C without addition of bacteria for 32 days in French oak barrels.
