Description of Dominio de Atauta 2016

Dominio de Atauta 2016 (Tempranillo)

TASTING NOTES:

  • View: deep cherry color with purple reflections.
  • Nose: Intense and complex aromas of red fruits and wild berries, with spicy, floral and toasted tones.
  • Mouth: Full body, balanced, meaty, active, balanced, with ripe tannins and fruit flavors. Long and toasted.

APPELLATION: Ribera del Duero.

VINEYARD: Domain Atauta.

GRAPES: Tempranillo.

AGEING: 16 months in French oak barrels.

PREPARATION: The grapes are handpicked and immediately subjected to a process of stripping. Then maceration is made in contact with your skin for a period of 4 days. The grapes are pressed gently and the juice obtained is subjected to a fermentation in stainless steel barrels at controlled temperatures. After a long process of maturation, the wine is bottled.

PAIRING: Red meats, roasts, poultry, game birds, aged cheeses, cream of mushroom soup, pasta with red sauces.

RECOMMENDED TEMPERATURE SERVICE: 15-18 °C

Dominio de Atauta

We are in the Valley Atauta in Soria, almost at the eastern boundary of the Ribera del Duero. Domain Atauta is built in four heights on rock and totally gravity (to avoid unnecessary pumping), on a slope of the valley, surrounded by vineyards, 7 km south of the town of San Esteban de Gormaz, through which the Duero. One of the peculiarities of Atauta is the altitude at which the vineyard is located between 950 and 1000 meters above sea level, giving it a slower ripening of the grapes. It is harvested by hand and all the grapes enters the top floor where falls deposits located at the next level.

Dominio de Atauta is one of the emblems of the warehouse beyond the uniqueness of the wines of payment. It is an intense wine, balsamic, with a remarkable body that does not preclude an excellent step in the mouth. Dominio de Atauta is a red wine from 14, 5% Alc. prepared by the Domino Atauta winery in the Valley Atauta (Soria) and within the O. D. Bank Douro. The Dominio de Atauta is made with 100% grape Tinto Fino (Tempranillo), obtained from vineyards controlled located on sandy soils, with pebbles and on limestone, of between 100 and 140 years on average, located between 950 and 1000 m above sea level, cultivated with the utmost respect, using only organic products and subjected to extreme continental climate. Grape collected manually and quickly moves to the winery, where selected, destemmed, squeezed and transferred to deposits of cement and wood, depending on the characteristics of each plot where macerated and fermented at a controlled temperature. After the fermentation, the wine is pressed and moved to oak vats, where malolactic fermentation. After this, the wine is transferred to new French oak barrels (40%) and used (60%), where it rests for 16 months, before a light filtered and bottled. CATAVISTA: The Dominio de Atauta has a deep cherry red with maroon trim and is clean and intense color. NOSE: The aromas Dominio de Atauta red and black fruit, mixed with aromas of herbs, thyme, rosemary, on a soft balsamic and outstanding mineral character and mild spicy notes. MOUTH: The Dominio de Atauta has a fresh entry, with good acidity, soft tannins but present, reinforcing its structure with good volume, rich, silky, with a long finish and retro nasal where ripe fruit combined with mineral notes and toast.
