- Mouth: beautifully balanced, fresh palate but textured and elegant fruit flavors in the long finish and persistent.
VINEYARD: underperformance. Biodynamic Viticulture. The vineyards are located in the village of Gomariz, in the heart of the Ribeiro, in northwestern Spain. Strains, which consist of several native varieties of Galicia, including side and Treixadura, range in age from 60 to 90 years and are planted with a density of 4,000 to 7,000 vines per hectare. These old vines performance are low, with deep root systems that impart complex flavors and result soft and sweet tannins in the wine. The vineyards are located at an altitude of 250 meters and 180 to soils are a mixture of clay and shale.
GRAPES: Treixadura, Albariño, Godello and Caiño white.
AGEING: Aged for 10 months in partly new barrels of 500 liters.
PREPARATION: Made with minimal intervention in the vineyard and the winery. Fermentation began in stainless steel tanks at very low temperatures, and part of the fermentation took place in the skins. The fermented mash was transferred to 500 liter barrels to continue a slow fermentation at low temperatures. The wine did not go through malolactic fermentation maintaining its crispness. a minimum of sulfur was used and wine filtered gently.
