The experience of Bodegas Zárate in the production of wines dates back to the 18th century, which is why it is considered one of the oldest and most prestigious wineries in the Rías Baixas region, and a pioneer in the production of Albariño grapes, the variety that gives rise to Zárate el Palomar 2017.
In a land that expresses itself through the voice of its wines and its centuries-old vineyards, this white is born, characterized by its balanced mineral flavors and the touches of acidity that it takes on after spontaneous malolactic fermentation. This highlights the best attributes of the fruit and of the winemaking methods used to make Zárate el Palomar 2017, which will continue to develop between 5 and 10 years after bottling, if stored under optimum conditions.

Zárate el Palomar 2017 (Albariño)
- View: bright yellow.
- Nose: subtle, moderate, memories of ripe fruit and a spicy touch.
- Mouth: balanced with good acidity and magnificent structure.
APPELLATION: Rias Baixas.
VINEYARD: Vineyards located just 50 meters above sea level. Age of over 150 years, granitic soil.
AGEING: After the first racking, the wine being in contact with its fine lees 9 months until bottling.
PREPARATION: destemmed and subjected to a long, gentle pressing to obtain a low yield grape juice, grape juice fermented in foudre 2,200 liters of French oak from the Vosges 15 years grapes. With fermentation in foudre low extraction oxidative aging oak but allowing the wine to remain in contact with the lees without performing decanting until after malolactic fermentation, developed spontaneously achieved.

Reviews of Zárate el Palomar 2017
The colour of this 2019 seems darker than other vintages. Over all, the Zárate el Palomar reminded me of white flowers. This is what is called a fleshy wine.
And we serve it with lasagna.
I retained the colour, amber yellow. Fresh scents of white flowers, lemon and green apple. A Rias Baixas with a very good acidity.
Character, is the overall impression I get of this wine.
