Intense. Aromas of ripe peach, pineapple, white flowers, cream, pastry, vanilla and aromatic woods. Unctuous, balanced and floral. Feelings of apricot, exotic fruit, nutmeg, smoked. . . Persistent finish spicy and citrus. Very complex.
Despalillado clusters previous entry in the press, to avoid the transfer of herbaceous flavors of the scrape. A slow and gentle pressing step allows extraction of aromas of the grapes from old vines. A settling time, the clean must is fermented in tino 3. 000 liters of French Allier oak fine-grained, for 60 days at controlled temperature (10 ° C). For 4 months stays in contact with its lees, in order to increase the volume and intensity on the palate.
After fermentation and lees contact, the wine remains for 12 months in this tino and 10 months in concrete tank.
To perceive all its aromas and complexity, we recommend not too cool and serve 13º-14ºC before consumption
