The La Comtesse de Pazo Barrantes 2015 has an intense yellow colour and the bouquet has aromas of mangolia blossoms and fresh fruits. Intense. Aromas of ripe peach, pineapple, white flowers, cream, pastry, vanilla and aromatic woods. Unctuous, balanced and floral. Feelings of apricot, exotic fruit, nutmeg, smoked walnut. . . Persistent end spicy and citrus. Too complex.
Payment Cacheiro, a vineyard of old vines belonging to Pazo de Barrantes our Finca 12 hectares bordering the winery. Located in the Valle del Salnés.
Despalillado clusters previous entry in the press, to avoid the transfer of herbaceous flavors from scratch. A slow and gentle pressing step allows extraction of aromas of the grapes from old vines. After settling, the clean must is fermented in tino 3. 000 liters of French Allier oak fine-grained, for 60 days at controlled temperature (10 ° C). 6 months stays in contact with its lees, in order to increase the volume and intensity on the palate.
After fermentation and lees contact, the wine remains for 12 months in this tino.
Crayfish perfect with the pan with fresh verdurita paste; grilled lobster, mayonnaise acid; prawns steam, mustard and truffle oil; warm shrimp salad, honey mustard and green apple.
To perceive all its aromas and complexity, we recommend not too cool and serve 13º-14ºC before consumption
