A sunny July with cool nights was followed by a sticky and hot August with constant day and night temperatures. So the vintners of Castello Della Sala were asked to handle quickly and wisely. The 2001 vintage delivered very aromatic grapes resulting in elegant wines of good structure, acidity and alcoholic degree with a nice aging potential. The name of the Castello Della Sala Antinori Cervaro Della Sala Umbria Blanc 2001 refers to the noble family, the Monaldeschi Della Cervara, who owned the Castello Della Sala in the 14th century. But in 1940, the Antinori family purchased this winery to produce the brand's first edition of the award-winning and renowned Cervaro Della Sala in 1985.

The beautiful Castello della Sala, prestigious Umbrian estate of Antinori family, stands on a promontory of the Umbria. A place of incredible beauty and charm. For decades represents the heart of the production of the best white wines targati Antinori.
In the spring of 1979, the Castle comes Renzo Cotarella, a young agronomist who in less than ten years will carry the symbol of the estate's wines. In those years he begins immediately to work on an ambitious redevelopment varietal. This is aimed at obtaining white wines with more character than those produced in the Orvieto Classico. It works on chardonnay and deepen knowledge on Grechetto. The search for a great wine that is affirmed by character and personality becomes almost an obsession.
Founded in 1985, the Cervaro della Sala, absolutely one of the best known and appreciated Italian wines in the world.

Cervaro Della Sala Marchesi Antinori Magnum 2001
The initial stages of the 2001 spring saw a good amount of rain and slightly above average seasonal temperatures which favored a slight anticipation of the budding phase. The next climatic conditions, characterized by normal conditions of temperature and rainfall, has in fact determined excellent flowering and consequent fruit.
The rainfall for the first part of the summer, has allowed maintaining a good vegetative balance of the vines also in the month of August; Notwithstanding the high day temperatures, in fact, the nights were cool and it was a total ripening of all varieties.
Consequently also the trend of the grapes ripening processes are continued in an optimal manner without arrests, ensuring the prerequisite for an excellent harvest.
winemaking
The grapes come from vineyards of 14/18 years located on the property surrounding Castello della Sala, at elevations between 200 and 400 meters s. the. m. , In Pliocene sedimentary soils rich in marine fossils with some clay.
The bunches, freshly picked, were transferred to a refrigerated conveyor, in order to ensure the low temperature at the time of stemming and crushing. The varieties were vinified separately in order to preserve the aromas, the musts remained in contact with the skins for about 8 hours at 10 ° C. After this stage, the musts were transferred into new 225 l. French oak (Allier and Troncais) where alcoholic fermentation took place over a period of 15 days. The wine remained on its lees in oak barrels for about five months, during which time he completed malolactic fermentation. It 'was then blended and bottled. It was then aged for a further 10 months in the historic cellars of Castello della Sala before being released on the market.

Tasting Notes

Complex aroma, intensely fruity with hints of vanilla. Citrus and tropical fruit characterize the nose. The taste is structured, mineral, with a long and persistent final note.
