winemaking:
The grapes come from vineyards of Castello della Sala located at a height between 200 and 400 meters s. the. m. in soils derived from marine fossil sediments with clay. The bunches, freshly picked, were cooled and conveyed within particular reservoirs capable of maintaining the temperature at 10 ºC without altering the varietal characteristics of the grape. After a few hours of contact with the skins, the "flower must" has been transferred into French oak barrels (Allier and Troncais) where it was held the alcoholic fermentation and malolactic partially. For a part of the wine and 'followed by a period of aging in wood of about 5 months while the other part, immediately following the alcoholic fermentation, it was immediately transferred to stainless steel tanks where it remained in contact with the skins until the moment assembly and bottling.

Chardonnay "Bramito the Deer" is a white wine classified as Umbria IGT. It is produced on the estate of the castle owned by Hall of Antinori family with a centuries-old tradition in the sector, so that in this estate produces wine since the '500. The vineyards are located in Umbria not far from Orvieto, near the border with Tuscany. Here the hilly terrain, clay and rich in minerals, have proved very suitable for grape growing. The Bramito wine Cervo is produced since 1994 (first year of production) exclusively with Chardonnay grapes. This French variety, widely distributed across Italy, in this area can express wines of particular minerality and elegance. The harvest takes place in the second half of August; After pressing, the must is fermented in part in wood and partly in stainless steel vats. The wine is quite full-bodied and smooth. Its marked minerality gives the wine tasting a final pleasantly tangy.

- A brilliant yellow in colour with greenish highlights, the wine shows fresh and complex aromas with delicate notes of tropical fruit such as pineapple and of citrus fruit, hazelnut butter, and vanilla.
- It is a wine of good structure, elegance, and a mineral character perceptible in its vibrant and balanced acidity, well fused with the notes of fruit.4
