Antinori Castello Della Sala Chardonnay Bramito del Cervo 2018 (Chardonnay)
- View: straw yellow, golden reflections.
- Nose: intense, fruity notes of apple and good hints of vanilla and toasted whiffs.
- Mouth: elegant and soft, round, mineral, refined and an envelope.
GRAPES: 100% Chardonnay.
AGEING: Aged for 5 months.
PREPARATION: grapes collected and taken to installations used for vinification cellar, extraction and crushed, subjected to a brief maceration of 2 to 4 hours after being cooled to 10 °C in steel tanks. Musts partially transferred wood and partly in stainless steel, with fermentation carried out at a controlled temperature. Only parcels vinified in barrels made malolactic fermentation.
PAIRING: risotto with vegetables, grilled fish, white meat stew, pasta with fish and tomato. Pasta with vegetable sauce.
RECOMMENDED SERVING TEMPERATURE: 8-10 °C

The grapes come from vineyards of Castello della Sala located at a height between 200 and 400 meters s. the. m. in soils derived from marine fossil sediments with clay. The bunches, freshly picked, were cooled and conveyed within particular reservoirs capable of maintaining the temperature at 10 ºC without altering the varietal characteristics of the grape. After a few hours of contact with the skins, the "flower must" has been transferred into French oak barrels (Allier and Troncais) where it was held the alcoholic fermentation and malolactic partially. For a part of the wine and 'followed by a period of aging in wood of about 5 months while the other part, immediately following the alcoholic fermentation, it was immediately transferred to stainless steel tanks where it remained in contact with the skins until the moment assembly and bottling.
