The Purple Rose of Tuscany Castello di Ama is produced primarily from Sangiovese and small amounts of Merlot grapes, harvested by hand in small boxes between the end of August and the first days of October. To achieve this rosé, the best vats to red wine production are subjected to the bleeding technique - or saignée - after 12 hours of maceration on the skins. The fermentation takes place in barriques, giving the product a remarkable longevity and a greater character. Seeing bright purple, the nose opens with intense aromas of red fruit, ripe cherry and wild strawberry on everyone. The taste is still fruity and persistent, characterized by constant returns and minerals by an extraordinary freshness. Perfect to accompany sushi and dishes of fish, it is ideal for pairing with seafood.
