Castello di Ama Haiku 2017 (Cabernet Franc, Merlot and Sangiovese)
- View: Intense red ruby purple with red hues.

GRAPES: Sangoviese, Cabernet Franc and Merlot.
AGEING: after malolactic fermentation, the three grape varieties were mixed. Then the wine was transferred in oak barrels of fine grain, of which 24% were new.
PREPARATION: vinification began using environmental yeast, separately for each variety and in steel tanks at a controlled temperature of 30-32 ° C, with manual pumping and cuvaison total of 23 days for Sangiovese, 26 days and 23 days for Merlot for Cabernet Franc. After the first decanting, the wine is transferred to steel tanks for malolactic fermentation.
WINE PAIRING: Serve with grilled red meats, roasts and rice.
