Spier Wine Farm 21 Gables Pinotage (Pinotage)
- View: dark red, a vibrant red hue.
- Nose: candied black cherries, hints of dark spices and black chocolate.
- Mouth: soft and full entry, rich notes of fruit and velvety tannins.
VINEYARD: dryland vineyards overlooking False Bay on the south side of Stellenbosch fruit produced for this unique wine. Decomposed granite floors help water retention because it contains a high proportion of clay.
GRAPES: 100% Pinotage.
AGEING: freewheeling wine is drained to a combination of French oak barrels, American and Hungarian first and second filling, where it matures for 18 months.
PREPARATION: The grapes are harvested by hand (to minimize damage to berries) and cooled before the classification of the bunch. After destemming, the berries were classified by hand to remove raisins, berries pink and large berries. Partial natural fermentation takes place in stainless steel. The rest is inoculated with a strain of yeast especially.
WINE PAIRING: dishes beef, venison, lamb and ostrich, juicy berries and strong cheeses.
