Spier Wine Farm 21 Gables Chenin Blanc (Chenin)
- View: buttery melted gold, a bright and vibrant edge.
- Nose: soft dried apricots, a background of oak and vanilla on the nose.
- Mouth: flavors of white peaches, almonds and oranges mass on the palate.
VINEYARD: The vineyard is planted in the high hills of Tygerberg. The landscape is famous for its ancient geological formations and soil of Malmesbury shale. The proximity to the ocean is about 15 km.
GRAPES: 100% Chenin Blanc.
AGEING: The wine was aged for 14 months in barrels.
PREPARATION: grapes were harvested by hand in boxes of 10 kg load and previously cooled before sorting, stripping and grinding by hand. The skin contact was limited to 6 hours and the juice was drained free to settle overnight before inoculation. Fermentation was carried out in a combination of French oak barrels of 300L, 400L, 500L and 2500L.
