Southern Australia is probably the most important wine-producing region of Australia. Now, the most important areas are the coldest ones, such as Coonawarra, but for many years, the highest recognition went to the warm valleys like Barossa.

The strains grown in Southern Australia depend on the area of cultivation. Therefore, in the area of Coonawarra, the red wines produced in its red soil are Cabernet Sauvignon and Syrah grapes and for whites, the Riesling. In Barossa Valley, northwest of Adelaide, aromatic white wines come from strains of Riesling, Semillon and Chardonnay. For red wines, fleshy and with a full body, they grow Cabernet Sauvignon, Syrah and Pinot Noir.

In South Australia there are other growing areas, though not so important, such as Padthaway, Clare Valley, Riverland, Adelaide Hills and Southern Wales.
