Santa Tresa Grillo Viogner Rina Ianca Bio 2019 (Grillo and Viognier)

GRAPES: Viognier Grillo 70% and 30%.
AGEING: After fermentation, the two wines are mixed and the wine is kept on lees for about 4 months, with frequent agitation.
PREPARATION: Grillo and Viognier grapes are harvested by hand and placed in small containers of 15 kg. Viognier is harvested in late August, while Grillo is harvested during the first fortnight of September. Both grape varieties are vinified similarly. grapes are cooled overnight in a refrigerated room to lower the temperature at 6-8 ° C, thus protecting the aromatic characteristics of the grapes. At the next day, the grapes are gently de-stemmed and pressed very gently. The wort remaining in the tank overnight at a temperature of about 10 ° C, allowing the natural sedimentation of all solid particles. The wine is transferred to a stainless steel tank, where the fermentation is carried out at 17-19 ° C for 10-12 days.
