GRAPES: 100% Merlot.
AGEING: 24 months of ageing in oak barrels, followed by an additional 12 months in the bottle.
PREPARATION: For the vinification of this Merlot, harvest was conducted manually in 300 kg bins. A cold maceration was then conducted at a temperature of 10°C for a duration of 3 - 4 days. Afterwards, the fermentation process took place at a controlled temperature of 25°C for five additional days, followed by maceration and natural malolactic fermentation. The product is then kept in new stainless steel tanks for six months, and only 10% of the liquor is allowed to mature in French and American oak barrels.
PAIRING: This red is ideal for grilled red meat, spicy pasta, beef, and venison.
