Mission Estate Hawke's Bay Reserve Cabernet Sauvignon 2017 (Cabernet Sauvignon)

TASTING NOTES:

  • View: Mission Estate Hawke's Bay Reserve Cabernet Sauvignon 2017 is a deep-purple-coloured wine with a purple rim.
  • Nose: Aromas of blackberry, cassis, currants, cedar, cloves and spice are dominating this wine's nose.
  • Mouth: On the palate, Mission Estate Hawke's Bay Reserve Cabernet Sauvignon 2017 is a full-bodied wine with strong and powerful tannin structure and medium acidity. The complex flavour profile of this wine is defined by notes of tobacco, chocolate, coffee, blackberry jam, cloves, graphite and charred wood. The ageing potential of this wine is unbelievable, and expectations are that the tannins will become softer in the next ten years.

APPELLATION: Hawkes Bay

VINEYARD: Mission Estate. The Mission Estate winery is a New Zealand winery established in 1851.The grapes for their Cabernet Sauvignon Reserve wines were grown on premium Gimblett gravel soil, vineyards. The soils are just what top-quality grapes need, free draining. The vines are low in vigour, with small bunches and tiny berries.

GRAPES: 85% Cabernet Sauvignon, 15% Merlot

AGEING: The wine was aged in 25% new oak for 12 months before racking and bottling.

PREPARATION: The grapes were blended and fermented at 28-30° with everyday pumping over. The maceration lasted 30 days after fermentation to allow the softening of tannins. Then malolactic fermentation took place.

PAIRING: If you do decide to open it before 2022, you should pair it with meaty dishes like filet mignon, lamb chops, roasted beef, venison or veal. Make sure you season it with rosemary, garlic or basil to complement wine's spicy character.

RECOMMENDED SERVING TEMPERATURE: 16-18°C
