APPELLATION: Prosecco Treviso.
VINEYARD: Altitude: 150 meters above the level of the sea. Exposure: east-west.
GRAPES: 100% Glera.
AGEING: The wine remains in contact with yeasts for approx. 15 days, so that the resulting sparkling wine acquires more flavor and a distinctive fruity aroma. After bottling, the wine can age 4/6 weeks.
PREPARATION: The grapes are harvested by hand in September, when they have the best chemical, organoleptic properties and ground slightly. The must then undergoes static settling. Primary fermentation takes place in steel tanks at 16 ° C with the help of selected yeasts. Before concluding the process of primary fermentation, the wine, which has a high content of sugar residues, is introduced into a pressure tank which becomes frothy. This stage occurs while continuing the primary fermentation process. This process lasts 20/25 days.
