GRAPES: 100% Glera
PREPARATION: Gentle pressing of the grapes, static sedimentation and temperature controlled fermentation. In stainless steel tanks temperature controlled contact the noble slag. Second fermentation: Fermentation temperature controlled autoclave (cuvee close) and yeasts selected for about 150 days.
WINE PAIRING: Ideal to serve with Asian dishes, seafood, cheese.
