PREPARATION: grapes harvested between September and October. After gentle pressing, fermentation carried out at a controlled temperature of 17-19ºC with selected yeasts. Permanence on lees in stainless steel for 3 months, subjected to a fermentation in steel autoclaves, at a temperature of 15-17 ° C according to the Charmat method.
WINE PAIRING: fruit tarts, focaccia and phyllo dough.
