TASTING NOTES:

  • View: nice pale gold.
  • Nose: Open aroma, notes of citrus (grapefruit and lemon).
  • Mouth: Vivid, powerful, with a marked minerality attack.

APPELLATION: Petit Chablis.

VINEYARD: Kidmerigiano (clayey-chalky). This exhibition on the plateaus. Assembly of two plots.

GRAPES: Chardonnay.

AGEING: Aged on fine lees. collage bentonite.

DEVELOPMENT: Harvest in September, pressings tires, filled by gravity. Fermentation in stainless steel tanks under controlled temperatures.

PAIRING: seafood, shellfish such as oysters.

Salty mineral nose through to a dry mouthwatering finish with apricot hints and a cleansing, walnutty finish Nothing 'petit' about this!

I tried it on a tasting course.
The colour was rather dark golden yellow, it seemed almost white. A Domaine Jean Goulley & Fils with aromas of acacia flower. Very nice roasted flavours.
The best pairing would have been fish.
