TASTING NOTES:
- View: nice grana and violet edge color. Clean and bright.
- Nose: deep aromatic expression, an important intensity of wild red fruit, cherry and raspberry, a way more subtle, floral notes, timid toasted notes, licorice, roasted and spiced well integrated.
- Mouth: attack notorious, intense, meaty texture and velvety medium, a step envelope, comprehensive and balanced, with a good fruity sensation, creamy milk and liquorice, aromatic return spicy and slightly smoky, with good acidity and ripe tannins , a nice finish with spicy memories and notes of toasted wood.
APPELLATION: Penedes.
GRAPES: Grenache.
AGEING: a period of aging of 5 months elapse in French oak barrels freshman.
PREPARATION: the fermentation takes place at 20 ° C in stainless steel tanks for 4 weeks, and during this process performed daily between 2 and 3 times per day.
PAIRING WINE: Appetizers, Rice with meat, white meat grilled meat red roasted, red meat with sauce, grilled lamb, stew, burger strong beef, grilled vegetables, pasta with meat sauce, roast chicken, cow cheese and mushrooms.

The Winery
Parés Baltà

Pares Balta is a tiny, top end winery, founded in the 1930's in an area that has been producing wine since the 1700's. The family-owned winery produces Cavas, and still red and white wines. The vineyards are spread out over five premium estates, with a total of 176 hectares of low yielding vines. The vineyards enjoy a balmy microclimate and are located only a few miles form the Mediterranean Sea in the Penedes and Cava appellations. Pars Balt uses a multitude of grape varietals for their wines, from the traditional cava grapes of Macabeo, Xarel.lo, and Parellada; to Syrah and Cabernet Sauvignon for velvety rich reds; and finally, to non-traditional Catalan grape varietals such as Chardonnay or even Gewurztraminer for oak aged whites. While not an "official" organic winery, they use many eco-friendly viticulture and winemaking practices such as allowing sheep to fertilize the vineyards naturally.
