VINEYARD: Cavas Castillo de Perelada S.A. Having acquired the land in 1923 by Miguel Mateu, the vineyard has been in the family ever since. The main objective was to revive the winemaking tradition dating back to the Middle Age. Today, a combination of decades of experience and modern technology helps bringing out the fine qualities of grapes and producing top shelf wines.
GRAPES: 62% Parellada, 25% Xarel-lo, 13% Macabeu.
AGEING: A minimum of twelve months in the bottle, before disgorging.
PREPARATION: The preparation consists of a temperature-controlled fermentation of the first most, following a traditional process. The combination of the three traditional grapes give this sparkling wine a balanced and harmonious flavour, full of the usual elegance that comes with the wines from Cavas Castillo de Perelada. Definitely the perfect way to start what promises to be a fantastic dinner.
PAIRING: This cava pairs good with cheeses, such as Manchego and Parmesan.

Castillo de Perelada is located in the northeastern corner of Catalonia, in the province of Girona. The production area includes 40 municipalities and covers the slopes of the Sierras de Rodes and the Albera, describing an arc from Cape Creus to call d'Emporda Garrotxa.More about the Winery
