The 2010 Can Credo is produced with Xarello grapes from the La Piedra Blanca (the white stone) vineyard which has a very chalky – and therefore white – soil. The wine ferments in used oak barrels where it ages for one month and is matured in stainless steel in contact with the lees for three months to add complexity and volume. The result feels very calcareous with chalk and pear notes, balsamic aromas of fennel and wax, spices. and a hint of smoke, which define a very complex nose. It is very clean, with precise acidity, balanced, with a bitter finish. A mineral wine of strong personality. Drink now-2018. Celler Credo is the biodynamic still wine winery from Cava producer Recaredo which took off big time in 2013 with the creation of a whole range of wines, exclusively from Xarello grapes from their vineyards, produced using different techniques. Here they follow the same Demeter-certified biodynamic principles and high standards used for the sparkling wines and they are strictly organic and respectful with nature and tradition.View more
