Description of Aloers 2018
Aloers 2018 (Xarel·lo)
- View: pale straw yellow and bright.
- Nose: smoky and fennel notes.
- Mouth: dense, tense and with good acidity.
VINEYARD: Xarel·lo a vineyard located in the interior of the Alt Penedès, in the municipality of Subirats. Cultivated following the principles of organic and biodynamic agriculture. Calcareous soils.
GRAPES: 100% Xarel.lo.
AGEING: aged in deposits with the finest lees for 6 months.
METHOD: Handpicked. It is made from scratch and maceration with the grape skins for a few hours. Fermentation takes place with indigenous yeasts isolated from the vines of Celler Credo. In order to provide smoothness and structure to the wine, 'battonage' is performed for about a month
WINE PAIRING: meat with creamy sauces and risotto.
