- View: This white wine is a green-yellow colour, much like the inside of green apples.
- Nose: Citrus scents dominate the nose. Following scents of crisp apples and spices add to the light aroma.
- Mouth: In the mouth, the wine tastes fresh as can be. Notes of apples and lemons come together to make a bright beverage. Notes of vanilla add a touch of smoothness to the wine, as well.
APPELLATION: Pays d'Oc
VINEYARD: The grapes used in this wine are grown by Les Vignobles Foncalieu in Pays d'Oc, France. This winery owns 4500 hectares of vineyards which produce a large variety of grapes. Much of the soil in this large vineyard is composed of limestone. This soil is perfect for growing green grapes used to make white wines, like the chardonnay grapes used in this wine.
AGEING: This wine is fermented in stainless steel tanks for up to eight months. Drinkers are advised to drink the wine shortly after purchasing, instead of bottle-ageing it.
PREPARATION: After the grapes are picked, they are destemmed, pressed, macerated, and fermented. The fermentation is done in stainless steel tanks for a period of eight months. The lees are stirred often. Oak chips are also added to the tanks to add flavours of oak spices.
PAIRING: This wine pairs best with poultry, namely roast chicken and turkey.
