Château Arrogant Frog is located in a Mediterranean climate with oceanic influence, and with north-facing vineyards.GRAPES: 55% Cabernet Sauvignon, 45% MerlotAGEING: Four months in new oak barrels (25%) or stainless steel vats (75%), then a further two months in vats.PREPARATION: The Cabernet is grown on 15 to 25 year-old vines in clay, limestone, and gravelled soil. The Merlot is from 16 to 25 year-old vines in deep clay and limestone terroir. Guyot Simple pruning. The grapes are harvested mechanically at night to avoid premature oxidation. Following destemming, each variety is vinified separately. There are three days of skin contact at 10°C before fermentation with daily pumping over for six days at 24/26°C. With temperature controlled at a maximum of 24°C, the Cabernet undergoes nine days of maceration, and the Merlot eight days, prior to a November ‘assemblage' then maturation.PAIRING: Best served with barbecues, lamb, red meats, cheeses, chocolate desserts.RECOMMENDED SERVING TEMPERATURE: 17°CALCOHOL: 13.5%”
