Paul Ricard was in his early 20s when he first crafted his recipe for an anise-based liqueur. It took a lot of experimentation but in 1932, Paul Ricard was so proud of his creation that he named it after himself: Ricard, Pastis de Marseille. The recipe has remained secret ever since and is rumoured to have never even been written down.
What is known about Ricard is that it is a mix of anise, fennel, liquorice, and subtle Provence herbs that the world has come to love. This liqueur is aged in large barrels out in the open. This allows the salt spray of Marseille to lick the barrels and give its own special touch to the final product. Now a part of the portfolio at Pernod Ricard, Ricard is the number one anise-based spirit in the world and the biggest selling spirit in France.
Ricard gives off a beautiful aroma of star anise and liquorice but the flavour does not end there. The palate is full of a wide array of flavours such as fruit, wood, and mixed spices. The long, soft finish will please the tongue and make you want to come back for more. This pastis is traditionally served with one measure of liqueur to five measures of water to whet the appetite before a meal. It is also a great drink to drink on a hot day - with plenty of ice, of course.
