Elaboration of Château Simone Blanc 2016
Château Simone Blanc 2016 (Clairette, Ugni Blanc and Grenache Blanc)

- Mouth: fresh and elegant flavor with a perfectly balanced acidity and a spicy palate finish.
VINEYARD: Château Simone.
GRAPES: Clairette, Grenache, Ugni Blanc, Bourboulenc, Muscat Blanc.
AGEING: This wine rests on its lees for 5 months.
PREPARATION: The mixture is pressed grapes and macerated in cold temperatures for 10 hours, then the wort is brought to a stainless steel tank, where it goes through a process of fermentation using yeasts chosen natural meticulously. The wine remains on its lees for 5 months, acquiring flavors and aromas. Finally it stabilized at cold temperatures and bottled unfiltered.
WINE PAIRING: Fish, seafood, lobster, crab, risottos, paellas, pastas, stir fry vegetables, fresh salads, appetizers, white meat, fruit and cream desserts.

It was a surprise for my best friend.
A 2008 vintage that shows a golden brown colour. Over all, the Château Simone Blanc reminded me of white flowers. It reminded me of honey, nuts... Sweet.
