Description · Château Simone
Château Simone 2015 (Grenache, Mourvedre, Cinsault, Monastrell, Syrah and Garnacha negra)
- View: dark pink.
- Nose: Aromatic notes of ripe red fruits with a spicy touch and aroma and mineral salt
- Mouth: fresh and pleasant flavor, density on the palate and a spicy finish with a saline touch.
VINEYARD: Simone Castle.
GRAPES: Grenache, Mourvedre, Cinsault, Syrah, Castet Manosquin, Carignan, Muscat.
AGEING: This wine rests on its lees for 6 months.
PREPARATION: The mixture is gently pressed grapes and macerated in a tank for 10 hours at temperatures of 16 °C. Then the must is fermented in stainless steel tanks with use of natural yeasts and partially cold temperatures. The wine rests on its lees for 6 months, then cold stabilized and bottled unfiltered.
PAIRING: Fresh salads, appetizers, stir fry vegetables, mushrooms, white meat, red meat, cold cuts, pasta red sauces, risottos, paellas, blue fish.
RECOMMENDED TEMPERATURE SERVICE: 10-12 °C

Bright ruby red colour with reddish brown highlights. Vanilla aromas. The wine was ok.
