Château Simone 2015 (Grenache, Mourvedre, Cinsault, Monastrell, Syrah and Garnacha negra)

  • Nose: Aromatic notes of ripe red fruits with a spicy touch and aroma and mineral salt
  • Mouth: fresh and pleasant flavor, density on the palate and a spicy finish with a saline touch.


VINEYARD: Simone Castle.

GRAPES: Grenache, Mourvedre, Cinsault, Syrah, Castet Manosquin, Carignan, Muscat.

AGEING: This wine rests on its lees for 6 months.

PREPARATION: The mixture is gently pressed grapes and macerated in a tank for 10 hours at temperatures of 16 °C. Then the must is fermented in stainless steel tanks with use of natural yeasts and partially cold temperatures. The wine rests on its lees for 6 months, then cold stabilized and bottled unfiltered.

PAIRING: Fresh salads, appetizers, stir fry vegetables, mushrooms, white meat, red meat, cold cuts, pasta red sauces, risottos, paellas, blue fish.

The colour was rather dark red. Good oak smell.A wine with body.
I took the Château Simone wine with grilled vegetables.

Best paired with other food than the one we ordered. It was part of a Corporate gift.
Bright ruby red colour with reddish brown highlights. Vanilla aromas. The wine was ok.
