TASTING NOTES:
- View: The wine has a vibrant ruby red with a touch of purple.
- Nose: The nose is refined opulence personified. Bright violets are infused with dark fruit with just a touch of earth and wood smoke. Abound sweet, rich spice clove, nutmeg and subtle aromatic cilantro.
- Mouth: The palate is alive with red berries and has a wealth of chocolate with hints of wild herbs. The wine has a full viscous texture and a lingering finish.
APPELLATION: Paarl.
VINEYARD: Vondeling Wines.
GRAPES: 67% Shiraz, 21% Mourvedre, Carignan 8%, 4% Grenache.
AGEING: it is allowed to mature for 16 months wine before a final selection of barrel, blending and bottling.
PREPARATION: The clusters partially destemmed, but not crushed, and fermentation of whole berries is carried out in open tank fermentation. an initial period of two days of soaking in cold is applied before fermentation begins wild yeast. After fermentation, the wine press in a traditional basket press boutique size. All the wine is transferred directly to the barrel where malolactic fermentation takes place.
PAIRING: Well paired with a boned leg of lamb, roasted on the grill over a hot bed of coal or a hearty pork belly simmered with root vegetables and tomatoes.
