Vondeling Chardonnay 2017 (Chardonnay)
TASTING NOTES:
- View: Pale straw lemon.
- Nose: refreshing bright citrus nose, potpourri and peach flowers and a subtle hint of beeswax.
- Mouth: medium bodied with great tension, fresh citrus, lime, yellow flowers, candied almonds and spices ginger, vibrant flavors and refined finish.
APPELLATION: Paarl.
VINEYARD: small tree-lined vineyard, tucked away in the upper valley of our farm, protected from strong sunlight and extreme temperatures, allowing a slow ripening of the grapes.
GRAPES: Chardonnay.
AGING matured over lees yeast for 7 months, after which, mixed in the tank and then returned to the barrel for 4 months. 12 months in oak barrels before being mixed in the tank for another 3 months to improve stabilization before bottling.
PREPARATION: grapes harvested at optimum maturity in the early hours of the morning. Then you moved to a cold room for an extra cooling. Crushed grapes in whole, spontaneous fermentation of the must in French oak barrels of 400 liters, with wild yeasts clusters. Without addition of sulphites and partial malolactic fermentation.
PAIRING: grilled fish, salads and creamy pasta Alfredo, a soft and aromatic curry.
