sweet and natural wine, from Pedro Ximenez grapes from which it takes name.
Its development is handmade and starts after picking the grapes and spread the sun on esparto mats. This sunny bunches of grapes will produce a dehydration and a large increase in the density of sugar, already high because of the nature of the grape, which gives it its characteristic sweetness.
Saved in American oak casks for years, a slow oxidation gives smells and complex flavors that make it a pleasure and a privilege for most discerning palates.
His mysterious and fragrant aroma, scented raisins and dates, either alone make it ideal for taking it as a dessert, either accompanying pasta and sweet companion.
