TASTING NOTES OF Don Px 2014:

  • View: amber, orange trim, discreet green flashes. Very dense and bright in the glass, abundant tears of slow decline.
  • Nose: intense and expressive, rich olfactory sensations, sweet memories of raisins, figs, dates and dried apricots, candied orange notes, honey and orange blossom on a fresh lemon juice background.
  • Mouth: attack envelope and satiny mouth, with a lingering with hints of dried apricots, figs sweet, full and very unctuous, fresh acidity and liveliness, a tasty wine but nothing cloying, long, raisins, dates, honey and toffee candy retronasally.

APPELLATION: Montilla-Moriles.

Pedro Ximenez grapes Don P. X young, they are harvested in late August and pasifican for over a week. This raisin grape makes wine making is complex. In the process a sweet wine that once partially fermented, is added rectified premium wine alcohol is obtained.

Since its inception in late August harvest to Pedro Ximenez grape it is carried sandy soil to make the process raisining. In its complex preparation for being pasificada grape hydraulic press it is used. a sweet wine are obtained after partial fermentation grinding quality wine alcohol is added reposing at least one year in stainless tanks for decanting wine as this is not subject to leaks to its high density.
