D'Arenberg The High Trellis Cabernet Sauvignon 2015 (Cabernet Sauvignon)

TASTING NOTES:

  • View: deep dark red.
  • Nose: cassis, plums, cedar, red pepper and violet.
  • Mouth: complex, fruity, elegant mouthfeel, a long thin and chalky tannins. Powerful, aromatic, persistent and charming at once.

APPELLATION: McLaren Vale.

VINES: D'Arenberg

GRAPES: Cabernet Sauvignon.

Aging: Aged on lees, without transfer to the final mix, without purification or filtration before bottling.

PREPARATION: small batches of grapes crushed gently and then open fermenters transferidoa to five tons. Permanence separate batches to the final mix. Stepped up two thirds of the way of fermentation. Then I pressed wine basket and transferred to oak barrels old American to complete the fermentation.

PAIRING: steak, wildfowl, goulash and lamb.

ALCOHOL CONTENT: 14.2%

I bought D'Arenberg The High Trellis Cabernet Sauvignon at Uvinum.
Deep colour at first sight. It smells like wild berries. It reminded me of berries .

Cooler years in McLaren Vale always lead to incredibly expressive and highly varietal Cabernets. The High Trellis is no exception with an abundance of blackcurrant, violets and minty notes leaping from the glass. Beautiful bright purple fruits dominate the palate, countered by typical Cabernet characters such as red capsicum skin and fresh mint. The wine feels quite linear at this stage of its development and the combination of fruit and fine chalky tannins seems to go on and on endlessly. A wine that can be savoured now or allowed to develop for the next five to 10 years.

Would pair it with some kind of special meat. I had tried D'Arenberg The High Trellis Cabernet Sauvignon with some wine enthusiasts.
It has a dark red colour. Great aromas of coffee and wood. It was harsh in the mouth for a McLaren Vale.
