VITICOLTURA All fruit has been cultivated in the Southern Valleys of Marlborough and comes mainly from Yarrum vineyard located on the crest Brancott / Ben Morven. Typical of this subregion, the loose soil blown by the wind are constituted by argillaceous clays with varying degrees of gravel content. The various source blocks are planted with a mixture of Pinot Noir clones, mainly of Dijon clones 115, 777 and 667, with small batches of UCD5 and AM 10/5. The vineyards are mainly hilly plantations trained to VSP two reeds (vertical positioning of buds) with a high vine density of 3788 plants per hectare.
VINIFICATION The grapes were harvested by hand and cooled overnight before manual sorting. Most of the fruit was then de-stemmed in fermenters in the open air, most of the fermentations with partial inclusion whole cluster. The fruit was left to soak on the skins before fermentation of the indigenous yeast, then immersed every day. After fermentation the wine was pressed, racked and filled with French oak barrels (40% new).
The individual clones were separately aged in barrels for 16 months, before mixing in August. Once in the tank, the wine was albumen for clarity, then bottled in November 2015 with alcohol 14, 0%, pH 3, 75 and 5 acidity, 2 g / l.
