TASTING NOTES:
- View: Cerasuolo pink claret tones similar to those of certain varieties of cherry and violet hues of orange with bright reflections color.
- Nose: intense and rich bouquet of roses and strawberries.
- Mouth: The palate pleasantly sweet, creamy and balanced with light tannins that provide a nice finish surface.
APPELLATION: Malvasia di Castelnuovo Don Bosco Spumante.
VINEYARD: white limestone soil with large beds of yellow sand and shallow marine fossils with chalk.
GRAPES: 100% Malvasia di Castelnuovo Don Bosco.
PREPARATION: vinification begins with a cold maceration for two days of freshly pressed grape juice before putting it into the wine press. After being decanted, the must is kept in stainless steel tanks at low temperatures until foam (production process of sparkling wine) is made according to the Italian method in steel tanks.
PAIRING: fish, crustaceans and cheeses.
