  • Nose: hints of smoky oak, a distinctive aroma of raspberry and thyme.
  • Mouth: vanilla, leather and spices, soft on the final oak.


VINEYARD: sandy-clay soil with excellent drainage.

GRAPES: Shiraz and Xinomavro.

AGEING: twelve months in Allier oak barrels medium toast to light and 12 to 15 months in bottle.

PREPARATION: waste disposal, light crushing, cold soak, skin contact, at temperatures of alcoholic gradual increase, maintenance of wine for seven months regular agitation fermentation.

PAIRING: beef stews, aged steak, hearty dishes.
