APPELLATION: Leyda Valley (San Antonio Valley - Chile).
VINEYARD: Viña Leyda.
GRAPES: 100% Cabernet Sauvignon.
AGEING: Aged in French oak barrels for 10 months.
PREPARATION: After gentle crushing grapes and juice were cooled to 10 ° C and held for 3 days in anaerobic conditions prior to inoculation of selected yeast. Fermentation occurred at 28 to 29 ° C for 7 days with a regime "traced" 3-4 times per day. The wine was left on its lees and skins for an additional 5 days to get more structure.
WINE PAIRING: Excellent with tasty meat dishes such as chili and creamy cheeses.
