Ceci To You Bolle di Lambrusco Rosso (Lambrusco Maestri)

- Nose: Complex aromas, wild berries seductive notes of strawberry, raspberry, blackberry, with splendid notes of violet in the final.
- Mouth: intense, smooth and round, with excellent balance thanks to its delicious freshness and polished tannins.
APPELLATION: Lambrusco Emilia.
GRAPES: Lambrusco Maestri.
ELABORATION harvested in early October, subjected to maceration skins at a low temperature of 5-7 days.
PAIRING: the noblest parma dishes, Italian dishes and international cuisine. With salami, parma ham, pasta with eggs.

It was in 1938 when Otello Ceci, a well-known innkeeper in the foggy lower part of Parma, managed that in his small trattoria a guest went “crazy” for the very dark lambrusco served in the bowls. Year after year, that marvelous ritual of wine-pressing in October became his “job” and that of his children, so much that the almost 400 best wine-growers in the area competed in selling him their best harvest.
